Dogramadj

 

Dogramadj is a light summery cold soup. Normally it is not be served as lunch; usually it is used to cool body down in very hot summer days in Azerbaijan. Dogramadj is called and made differently in different regions of Azerbaijan. This recipe shows how dogramadj is made in Baku. I have learned how to make it from my dear Nene – grandmother.

Red radishes – 4
Cucumber – 1 medium sized
Eggs – 2
Herbs – dill, coriander
Salt
Yogurt (natural or greek) 1 l
Water – 0,5 – 1 l

Hard boil and cool down the eggs. Dice all ingredients, finely chop herbs. Mix together yogurt and cold water (if it’s natural, you take 0,5 l to 1 l yogurt, if greek – 1:1), add salt to taste and add all diced and chopped ingredients. Leave in fridge for at least 2 hours. Serve cold.

One of the names of Dogramadj in regions is Ovdukh. In addition to above ingredients, some other herbs as well as some diced cooked beef is added. I have never tried such dogramadj and cannot comment on its taste.
